I figure home gardens are overflowing with zucchini about now, so this is a good recipe to share. I make this every Christmas morning. It's a delicious and elegant way to serve eggs.
Zucchini Egg Bake
3 c zucchini, peeled and chopped
1 large onion, chopped
2 garlic cloves, minced
1/4 c butter
4 eggs
1/2 c freshly grated Parmesan cheese
1 T dried parsley (or 1/4 c minced fresh parsley)
1/2 t dried basil (or 1 1/2 t minced fresh basil)
1/2 t salt
1/2 c shredded Monterey Jack cheese
Preheat oven to 350 degrees.
In a large skillet, saute the zucchini, onion and garlic in butter until tender; set aside.
In a large bowl, whisk the eggs, Parmesan cheese, parsley, basil, and salt. Stir in cooked zucchini mixture and Monterey Jack cheese.
Pour into a greased 1 quart baking dish. Bake in preheated oven for 20-25 minutes, or until a knife inserted near the center comes out clean. Let stand 5 minutes before serving.
